There are a number of features and benefits that make Valoriani ovens special.
When used properly, all Valoriani ovens are carbon neutral and each oven includes instructions regarding correct usage to ensure carbon neutrality.
Valoriani ovens have been designed for cooking and engineered for life since 1890 made from 100% naturally quarried Cotto Refrattario developed from the family quarry in Reggello, Florence that helps make the ovens retain their heat for longer and ultimately rendering them more fuel efficient.
Cotto Refrattario is Italian for “refractory terra‐cotta clay” that has better thermal efficiency than normal clay or cement based products and unlike “Micro-Mesh” technology, Cotto clay does not have metal or fibre particles added, therefore it is pure, natural and tested 100% Food Safe.
N.B. Having experimented with and tested Micro-Mesh technology Valoriani deemed it inferior in performance and unsafe due to the potential for material to disintegrate with use and time, releasing dangerous particles into the oven and potentially food.
In a UK market with great potential for sales growth, many new players have appeared. Some ovens currently available on the market have not been in production very long and therefore there is not any evidence of knowledge of construction techniques, reliability or longevity.
Many modern and imitation ovens are shown to have very short life spans, some as little as 6 months and many less than 3 years. Valoriani ovens have a proven track record with ovens still in continuous daily use after more than 30 years.

Perfectly Balanced
Valoriani ovens have the perfect balance of alumina in the clay allowing for the absorption of steam that is released during the cooking process. Too much alumina increases the strength of the material, but decreases the porosity of the clay thereby reducing the absorption of steam. The natural porous feel that Valoriani ovens have is essential to the cooking process.
Contained Floor
Each Valoriani oven is designed with an integral cooking floor that ensures and maintains a consistent floor temperature making cooking more accurate and easier. In the very unlikely event a floor needed repair every section can be repaired quickly without the need to dismantle the oven.
N.B. Many competitors’ ovens have floors that crack easily, giving an uneven work surface, which cannot retain heat or soft floors that wear and need replacing regularly, some as regularly as every two years. It is prudent to consider oven construction as some ovens are built onto the floor and need completely dismantling to repair the floor.
Continuous Curves
The interior oven walls and overhead crown elements of Valoriani ovens are all uninterrupted curves, allowing more natural movement of the air inside making cooking more consistent.
Perfect Size Opening
The oven mouth opening size of Valoriani ovens is really important to maximize fuel efficiency. The ovens are designed to get just the right balance between good visibility into the oven whilst maximising fuel efficiency.

These ranges will give many years service and have been in regular use in UK homes for over 15 years and still going strong. All of the UK specification ovens are DEFRA Licensed appliances.

In addition we are experts in bespoke mobile oven installation. The quality of our conversions and that of our ovens means your oven will last many years and is DEFRA Licensed. We have mobile ovens still in use after 15 years.
N.B. Many mobile ovens on the market do not use DEFRA licensed ovens.
Buyer Beware: We regularly hear of mobile ovens which cannot get hot or retain enough heat or worse fall apart very quickly. This is a new a buoyant market with many “me too” manufacturers keen to take your money. As with any capital investment we recommend you research thoroughly to secure the best oven for your business.
Key considerations would be:
• Usage – What will you use the oven for?
Baking, general cooking, grilling, pizza, roasting, slow roasting and more. All our ovens have slightly different features that might benefit one or more of these cooking styles and these are highlighted on the product pages here.
• Size – How big do you need your oven to be?
All our ovens cook perfect pizza from 1 to 20 at a time but in reality for home use you are unlikely to cook more than one pizza at a time. However you might want to cook other dishes, consider how many dishes you might want to cook at any one time and also consider the size of those dishes relative to the oven and oven mouth size.
• For Professional use you might want to consider how many covers you wish to serve, whether you intend to just use a Valoriani oven or use it as an additional cooking appliance and whether you intend to offer takeaway.
If you are intending to bake, the heat retention is a big factor as you will cook mainly on residual heat after the fire is extinguished. We are happy to advise you more accurately once we understand your specific cooking and operating requirements.
Questions to ask yourself:
• Longevity
Are you looking for an oven to last a lifetime or possibly not so long? Are you testing a concept, working on a tight budget or just trying out wood fired cooking but not sure if it will be for you in the longer term?
• Quality
Is the oven insulated to an adequate standard to give you correct cooking but also to be safe? Will the oven heat up in a reasonable amount of time and retain heat?
• AVPN Accreditation
Do you intend to do create Neapolitan pizza the AVPN way – if so you MUST consider the VERACE range here.
Esordio UK, Fornino UK, IGLOO UK and VERACE UK come in a traditional dome shape, the OT UK oven is in an octagon steel casing that can be used as is or we/you can clad it to suit your own design requirements.
We also have a number of ovens that can be incorporated in a bespoke design.
Bespoke designs can be as varied as your imagination – if it can be imagined it can be executed.
You require a base to raise and support the oven at a suitable height, provide under floor insulation, a cover to hold the upper insulation to complete the aesthetic look.
The finished look is entirely individual and you can use almost any materials to create a design specific to your taste. Please see images in our Gallery of Professional projects installed by our in house artisan installation team.
Should you need or wish to, it is also possible to convert all of the ovens with a painted decoration or an additional mosaic surface finish. This may be relevant, for example, if installing an OT UK for speed but at the same time wanting a bespoke finished look.
For our Residential oven ranges you can build and install them yourself. You would buy the oven from us in kit form and build both the oven base and housing yourself or you could hire your own builder.
Alternatively we can quote to do this for you with our bespoke artisan service. In any event, we provide you with a step by step instruction manual, and telephone support on how to build the oven and specifications for the base.
Due to the specialism required for installation of all our Professional oven ranges to ensure DEFRA Licence compliance and manufacturer warranties, all ovens are installed by our artisan installation team.
Almost all Professional oven installations require an initial site survey* to assess the situation to recommend the specification of oven required and to quote for the project. A site survey is also required before quoting for oven bases.
N.B. As an initial site survey* is required for all Professional oven installations we reserve the right to charge a site survey fee of £150 that will be deducted from the final purchase price should you go ahead and purchase an oven.

N.B Valoriani models available outside the UK are NOT UK specification and hence not DEFRA licensed for the UK.

Buyer Beware: Many competitor kits on the market only include a few basic components and not everything you need.
• We will always give you best and advice and make sure to compare “Apples with Apples.”
If we believe a product other than Valoriani is a better choice for you we will tell you and hopefully you will buy from us another time when our product is the right one for you.
If you want to operate your oven in a Smoke Controlled area in the UK then definitely YES. Local Authorities are empowered to close down or remove any Non DEFRA Licensed ovens. https://www.gov.uk/smoke-control-area-rules.
The problem can come from a Local Authority themselves or from a complaint by a neighbour, jealous competitor or someone with environmental concerns. There are many recent examples of this happening as the prevalence of this type of oven is increasing.
All Valoriani ovens supplied by Valoriani UK are DEFRA Licensed and have been awarded a clean air exemption certificate due to their low emissions ratings. They qualify as exempt fireplaces under statutory instruments 2007 No. 2462 Clean Air England smoke controlled areas (exempted fireplaces) (England) Order 2007, also for Scotland, Wales and Ireland that allows our range of ovens to be operated within smokeless zones across the United Kingdom.
Please check the Government website, as many oven manufacturers claim to have DEFRA Licences but do not have them. Conversely we do not claim to be the only suppliers to have DEFRA Licensed ovens.
N.B. Using a smoke cleansing device such as a “smoki” or burning artificial log substitutes does not constitute DEFRA Licence compliance.

Wood fueled ovens are very low maintenance and require only an occasional sweeping out of ash from the oven and flue in accordance with the flue installers guidelines.
Gas fueled ovens require a 240V 13amp electrical supply when using either a natural or propane gas supply. We strongly recommend GAS SAFE and flue maintenance contracts in accordance with the installers instructions.
For extraction and ventilation specifications specialist advice is required. To comply with the manufacturer’s warranty these must be fitted in compliance with all applicable regulations and codes.
