1 dough ball for a 9” pizza
Thin slices of apple, nectarine, kiwi fruit, banana
Strawberries and blackberries
For an extra-thin base, roll the 9” dough ball into a 12” circle on a solid work surface.
Spread a little honey over the base and drizzle with Cointreau.
Arrange the fruit in circles over the pizza.
Drizzle more Cointreau over the fruit and place directly on the oven floor at approximately 450º/500ºC for 60-80 seconds, rotating the pizza whilst it cooks, for even cooking. Remove and sprinkle with icing sugar.
Add strawberries & blackberries and serve with cream or ice cream. For a more decadent pizza, soak the fruit in white wine overnight.
