150gms of crayfish tails
One glass of red wine
Two tablespoons of marsala wine
One tablespoon of brandy
One pint of lobster bisque
One tablespoon of tomato ketchup
One teaspoon of balsamic vinegar
One teaspoon of Worcester sauce
Good pinch of salt
Good pinch of pepper
Two tablespoons of freshly chopped parsley
You will need an ovenproof baking dish, or pan, for the sauce and a skillet, or griddle pan, for the steaks.
Toss the steaks in the olive oil, after lacing it with salt and pepper to taste.
Put the steaks in the oven on the skillet or griddle. The cooking time will depend on the temperature of your oven, the amount of flame and how you like your steaks cooked.
Simmer the red wine in the pan, or tray, for two minutes, in your pizza oven.
Add the lobster bisque and marsala and bring to simmer point, in the oven.
Add the tomato ketchup, balsamic vinegar and Worcester sauce, stir and then return the sauce to the oven, to bring to simmer once more.
Add the salt, pepper and parsley.
Simmer for ten minutes and cover with tin foil, if necessary, to slow the cooking process, if your oven is very hot.
Add the crayfish tails and simmer in the oven for two minutes.
Add a tablespoon of brandy, stir and serve over the steak.
